Spice Up Your Taco Tuesday with Tostada Delights!

Are you tired of the same old Taco Tuesday routine? Why not switch things up and embrace a delicious twist with Tostada Tuesday instead? In this post, I'll share my plant-based tostada recipe that is packed with flavorful veggies and layers of crunch. It's a fantastic way to add a bit of excitement to your meal rotation and keep everyone's taste buds guessing. So, let's dive into this delightful culinary adventure!

To create your own mouthwatering tostadas, you'll need the following ingredients:

  • Baked corn tortillas
  • Vegan refried pinto beans
  • Broccoli slaw
  • Smashed avocado with lime
  • Pickled onions
  • Microgreens
  • Hot salsa

To prepare these mouthwatering Tostada Delights: 

  • Start by preheating your oven to 375°F (190°C).
  • Place corn tortillas on a baking sheet and lightly brush them with oil.
  • Bake them in the oven for about 10-12 minutes until they turn crispy and golden.
  • While the tortillas are baking, you can prepare the toppings. In a saucepan, heat a tablespoon of oil over medium heat and sauté a finely chopped onion until it becomes translucent.
  • Add a minced garlic clove and cook for an additional minute.
  • Then, incorporate a can of rinsed and drained pinto beans into the saucepan and a pinch of cumin, paprika, and salt to taste.
  • Stir well and cook for about 5 minutes to allow the flavors to meld together and the beans to soften. Set the refried pinto beans aside.
  • Next, assemble the other toppings. In a mixing bowl, combine shredded broccoli, carrot, and cabbage to create a refreshing and crunchy slaw.
  • In a separate bowl, mash ripe avocados with a squeeze of lime juice and a pinch of salt until you achieve a smooth and creamy consistency.
  • Thinly slice a red onion and pickle the slices by pouring a mixture of vinegar, water, salt, and sugar over them. Allow the pickled onions to marinate for at least 15-20 minutes.
  • Once the tortillas are crispy, it's time to assemble the tostadas. Take a baked corn tortilla and spread a generous layer of vegan refried pinto beans on top. Add a handful of the broccoli slaw, followed by a dollop of the mashed avocado with lime. Place a few pickled onion slices on the tostada and sprinkle some microgreens over it for freshness. Finally, drizzle your preferred amount of hot salsa to add a fiery kick.
